For the Muffins
½ cup, plus 1½ Tbsp Classic Soleil Mimosa
2 cups (about 8 1/2 ounces) all-purpose flour
1 Tbsp baking powder
½ tsp kosher salt
1 cup granulated sugar
2 large eggs
1 Tbsp orange zest, plus ¼ cup fresh orange juice, divided
½ cup melted unsalted butter, cooled slightly
For the Glaze
1½ Tbsp Soleil Mimosa Classic
¾ cup powdered sugar
¼ cup coarse sparkling sugar
2 teaspoons orange sanding sugar
Did someone say brunch?! Our Mimosa Muffins are the perfect addition for all your brunch gatherings, afternoon treats, midnight snacks, and everything else in between.
Preheat oven to 425°F.
Whisk together flour, baking powder, and salt in a medium bowl. Set aside.
In a separate large bowl, whisk together sugar, eggs, and orange zest. Whisk in butter and Classic Soleil Mimosa.
Gradually add the flour mixture to the egg mixture, whisking until just incorporated. The batter should be slightly lumpy.
Coat cups of a mini muffin pan with cooking spray. Spoon two tablespoons batter into each cup.
Bake in pre-heated oven for 5 minutes.
Lower oven temperature to 375°F and back for 5-6 minutes, until a toothpick comes out clean.
Allow to cool for 15 minutes before removing muffins from pan.
In a small bowl, whisk together powdered sugar and 1½ tablespoons of Classic Soleil Mimosa until smooth. Dip tops of the muffins in the Mimosa glaze. Combine the coarse sparkling sugar and orange sanding sugar and sprinkle evenly on top of muffins.
Serve up alongside Soleil Mimosa Classic and enjoy!
