Mango Lassi Cocktail
INGREDIENTS
Soleil Mimosa Mango
2 mangos, diced and frozen
¼ cup natural Greek yogurt
¼ cup crème fraîche or heavy cream
Sliced mango and strawberries, for garnish
A delicious frozen treat that’s begging to be enjoyed poolside or under the summer sun.
Place your glasses into the freezer to chill.
Pour half a bottle of Soleil Mimosa Mango into ice cube trays and place in freezer. Once frozen, crush the cubes into large chunks with a masher or fork. Return to freezer until needed.
Place the froze mango chunks in a food processor and, while running, gradually add a steady stream of the remaining Mimosa until a thick, glossy consistency is achieved, similar to a thick custard or mousse.
Remove glasses from freezer and spoon the frozen mango mixture into the base of the glasses and top with the Mimosa ice chunks.
Add a dollop of the yogurt to the top and garnish with sliced mangos and strawberries.
